Abstract

Mackerel (Rastrelliger sp.) and layang scad (Decapterus sp.) are high-consumption small pelagic fish in South Sulawesi, yet vulnerable to microbiological, heavy metal, and histamine contamination along weakened post-harvest cold chains. This study analyzed Total Plate Count (TPC), mercury (Hg), cadmium (Cd), and histamine levels and organoleptic quality in fish obtained from multiple distribution points in Makassar City. Samples from traditional markets showed the highest TPC (6.87 log CFU/g), histamine exceeding SNI thresholds (>100 mg/kg), and Cd above maximum limits. TPI Paotere samples showed the best quality across all parameters. A significant correlation was found between TPC and histamine content (r=0.934; p<0.05). It is concluded that cold chain degradation at traditional markets is the primary food safety risk factor for fresh fish products in Makassar
